Name Fish Mornay
Method Simmer fish until cooked. Flake and put into casserole dish. Melt butter in saucepan, take off heat and add flour, salt and pepper. Add milk and return to heat, and stir until sauce boils. Add paprika. Remove from heat and add cheese. Pour over fish. Can be topped with breadcrumbs and more cheese. Brown under griller.
