Name Pumpkin Soup
Method Melt butter in a heavy pan and add the pumpkin and the onion. Cook for 10 minutes stirring constantly. Add the water and cook gently until the pumpkin is very tender. Press through sieve or puree in electric blender with a little milk. Melt 30g of butter and stir in the flour, add the pumpkin puree and milk gradually stirring constantly until well blended. Simmer for 20 minutes. Just before serving combine the egg yolk with a little of the pumpkin soup. Stir into remaining soup.
